On a Roll ...

     I've been feeling a little under the weather, just a sore throat, but my daughter came over last night and made me comfort food ...  Pumpkin Cake Roll, the recipe from the Libby's Pumpkin can or their website.  Powdered sugar, pumpkin cake, and a cream cheese filling ...  Heaven to Betsy, that is good!  Very easy to make and such a pretty dessert.  
    Twelve days until Christmas ... are you A, B or C?
A.  Ready and just waiting for the big day.
B. Still having shopping & decorating to do.
C.  Waiting for it all to be over and looking forward to a new year.

I am A and on a roll ... presents purchased and wrapped just waiting to be with grandchildren, but also C.

  1. That pumpkin roll looks just like my grandma used to make. I wonder if she used the same recipe. I regret to inform you that the tickle in your throat might turn into a monster. Start drinking lots of liquids NOW. I have been a shut-in since the 6th. Doc finally put me on antibiotic, not to cure virus but to stop from turning into pneumonia or bronchitis. You have a precious child. I am just doing C.

    1. Probably is the same recipe, right off the can! We love it and it is super easy to make. We bake it on a cookie sheet lined with wax paper. I have a similar recipe for strawberry cream cheese vanilla cake I will post sometime. It is also easy and wonderful. I'm sorry you have been sick. I sure don't want anything more than a sore throat! I have had pneumonia twice in my life and thought i was gonna die both times. YOU GET BETTER! Adding you to my prayer list!

  2. Do you remember grandma C making this? I dug out the recipe the other day, then didn't have a pan, went to walmart and forgot to buy one so stuck the recipe back in the file for another year. Casey you did a fantastic job! You rock girl. By the way, I am certainly a C

    1. A PAN? We make it and that strawberry cream cheese cakeroll on a regular ol' cookie sheet with about a 1/2 inch side. No, I don't remember grandma making this. We all love it.

  3. I am as ready as i am going to be and ready for it to be over. 2013 was not a banner year for me.

    1. I know Olga. I don't know you but I wish we were neighbors and I could just keep you supplied with hugs during this difficult time. This first Christmas without Mike is going to be a hard day. I suspect all "firsts" are hard days but I hope they get easier. Take care

    1. It IS wonderful and so easy. The most difficult part is turning out of pan onto a towel but that is not so hard. here is recipe site:

    2. Oh, and I don't have a jelly roll pan. We just use a cookie sheet. The photo on my blog is a picture I took of the cake my daughter made. We cut it with a knife but if you have non-mint dental floss that makes a nice cut for any cake. Slip under the bottom of the roll and pull up, crossing ends over the roll and pulling through the cake. Almost like tying a shoe. Well, even to me that seems clear as mud!!!
